Hiro, an owner of an organic/allergen free supplement manufacturer, partnered up with Mina who is an expert in the “Kasaneni” cooking method to run a hospitality business aimed at providing the best care for their guests.
Our beliefs are grounded in how the Earth’s environment and the body’s internal environment are co-existent, which is why we aim to provide the supplies and experience to create lasting positive change in each of our clients and guests.
We are both passionate for music, nature, art, and traveling the world. Being based in Azumino, Nagano, we are thrilled to show our guests the best parts of Nagano. Whether you are visiting Azumino/Hakuba for business or leisure, we will be pleased to support you in any way possible during your stay.
About (Mina):
As a culinary expert of the “Kaseneni” method of cooking, I am inspired by the use of natural and organic ingredients. Growing up learning from my mother’s own Kasaneni cooking, I was inspired at a young age to begin my journey in the culinary world. As my mother learned from the founder of Kasaneni, Hokei Ogawa, I learned from her and was inspired to add my own style into the method.
I gained experience working at organic cafes, French restaurants, and trained as a pastry chef in France. My experience there later brought me to work as a dietary/nutrition manager of a hospital that used both Eastern and Western medicine in their practice. It was there that I further honed my cooking for those who needed healthy, reinvigorating meals.
Since 2007 I have been focusing on my Kasaneni style of cooking where I am actively developing new recipes in my own “Harmoneni” style. Utilizing my knowledge of nutrition, macrobiotics, and medicinal herbs I have worked and studied in Japan and overseas (Bali, Australia, France, Korea) to further my craft and spread my knowledge to others.
I have now taken over my mother’s restaurant “Nonoan” in Azumino, Nanago where I focus on providing original vegetable-based dishes using Kasaneni. Currently I am working on a project called the “Tiny Kitchen Revolution” in partnership with Talking Nature Lab to rethink food and the global environment – all from the kitchen.
